Foodie Friday: Creating New Memories (and Magic!) With Pork Tenderloin and a Holiday Leftover

There’s something special about December cooking… maybe it’s the twinkle lights, maybe it’s the cooler weather, or maybe it’s the fact that half the recipes we make this month were born from a moment of “Hey… I wonder what would happen if I threw this in a crock pot?”

This week’s Foodie Friday came straight from my scrolling habit. I kept seeing a recipe pop up on reels—simple, cozy, and perfect for the season. So of course, I suggested to my mom that we test it out for Christmas dinner this year. But patience has never been my superpower… so I’m trying it today. And y’all… it already smells like a Hallmark movie in my kitchen.

The Recipe: Cranberry Apple Pork Tenderloin (aka Memory Maker #47)

First, I chopped up a Granny Smith apple—you know, the tart, crisp, green one we all claim is “for baking” but somehow ends up in the snack drawer—and placed it in the bottom of the crock pot to make a sweet-tart, cozy little bed. Then we seared a pork tenderloin on all sides—because a little golden crust never hurt anybody—and nestled it right on top of those apple pieces.

Next came the star of the show: a can of leftover jellied cranberry sauce (still shaped like the can, as it should be). I spread it generously over the tenderloin. Finally, I added a couple sprigs of rosemary because nothing says “I am a fancy holiday chef” like herbs you didn’t grow but will absolutely take credit for. The result? A slow-cooking masterpiece that turns leftovers into something completely new—kind of like holiday magic, but easier.
