Holiday Greetings (and penguins)

There's no doubt about it, Christmas is my favorite time of the year. Everything from time with friends and family, baking, olive penguins, Christmas Eve service, Christmas hymns and carols to all the holiday movies on TV makes me happy. 

Last weekend, we celebrated at the German Christmas Market. This weekend, we will be celebrating with friends, and next weekend, with family. During this time, I wish you a very safe and happy holiday. 

Please remember that broadcasting your travel plans on social media is an invitation to unwelcome visitors in your house. Please remember to check all the wires before plugging in your lights and decorations. Please remember to check in the oven before turning it on. Please remember to. Bring in your pets when it's cold. Remember all the things that will keep you and your family safe. But above all, please remember the reason for the season and find a way to enjoy every minute! Peace and blessings from my family to yours this holiday season!


What you need for the olive penguins pictured here:
1 can of medium olives
1 can of large (or jumbo) olives
1 package cream cheese (I prefer to use it out of the fridge, not softened)
Toothpicks
A carrot

Slice carrots into round discs. Cut out a triangle piece from each disc, similar to slicing a piece of pie. (this creates the beak and the feet)
Slice one side of the jumbo olives from top to bottom. 
Stuff large olive with cream cheese. (I use it as cold as possible from the fridge so I can slide in a chunk of cream cheese without creating too much of a melty mess)
Put a small slice horizontally in the medium olive, just large enough to fit in the carrot triangle you cut. (I tend to take out a whole chunk instead of just one slice. This allows the carrot to fit easier without breaking the medium olive )
Finally, start building the penguin with the toothpick. Slide on the medium olive, then the large olive, then stick the toothpick down into the carrot to create a sturdy base.
